- Observation (CORRECTED DURING INSPECTION): Food found in upright 2 door cooler next to cookline measured above 4°C. Internal temperature of sliced mushrooms was 8.8°C, and internal temperature of opened chipotle mayo measured 9.0°C. Operator stated that mushrooms were sliced last night and kept in this cooler.
- Cooler ambient temperature was 8.5°C, but was lowered to 4°C during the inspection.
- Corrective action(s):
- 1. Sliced mushrooms, and opened chipotle mayo were discarded by the operator. Ensure that potentiallly hazardous foods are maintained at or below 4°C to prevent the growth of pathogens
- 2. Adjust and/or repair coolerto maintain 4°C or lower at all times. Ensure no potentially hazardous foods are stoveed in this cooler until repaired.
