- 2) Aluminum foil, covering the side of the wok station (in the dumpling making kitchen) and on the closet door in the pancake making area, has accumulated grease on it. This will attract pests.

- 1) Remove the exhaust filters and clean them. Use degreaser to remove the grease, and then wash with hot soapy water and a scrub brush. This shall be done every month.
- 2) Wash the floor under the cooking equipment with a degrease, and then use hot soapy water and a scrub brush. Pull the equipment out from the wall to access the floor underneath, or have a long scrub brush to pull the grease out from the wall and under the equipment. This shall be done every day.

- 1) Clean and sanitize the lower cupboard to remove mice droppings. Stuff the openings around the water pipes with steel wool.

- 2) Remove all items from the cupboards and shelves in the waitress area and clean all surfaces.
- 3) Move the chest freezer away from the wall in the waitress area, so the droppings are cleaned up and surfaces sanitized.

- 2) Domestic, powdered laundry detergent soap is being used to wash the floors of the kitchen. This soap is not made to clean floors, nor is it strong enough as it isn't a "degreaser".

- Observation: 1) The low temperature dishwasher had [Cl2] of 0ppm during the rinse cycle. The dishes are not being sanitized.
- 2) The upright freezer, by the dishwasher, has not been replaced yet. The plastic, interior surface is cracked and the insulation is exposed. This is not cleanable.
- Corrective Action(s): 1) Immediately call a company to repair the dishwasher, so the [Cl2] is between 50-100ppm during each rinse cycle. Manually sanitize dishes after running through the dishwasher, by filling a sink with hot water and bleach (1 Tbsp of bleach to 4L of water) and soaking dishes in it for 2 minutes. Then remove and air dry. During the inspection, the owner called a company to come and repair the dishwasher.

- Transfer the oyster sauce into a food grade containers and cover it with a lid, saran wrap or aluminum foil. Staff completed this during the inspection.

- The following actions must be taked to eliminate the mice problem:

- 2) Every morning and before leaving at night, the floor under all tables & equipment must be cleaned. Move all items off the floor and move them away from the wall so the floor can be cleaned.

- 3) The hot water tap, of the 2-comp prep sink, has a nail as the handle. The nail is not food grade or intended to be a tap.
- 4) The inner surfaces of the upright freezer, by the dishwasher, are cracked and chipped exposing the insulation. The surface is not durable, smooth, sealed or cleanable.

- 1) The aluminum foil covering the surfaces shall not be used, OR it must be removed and thrown away at the end of the night. In the morning, new aluminum foil must be installed as it is not cleanable. During the inspection, staff agreed to do this tonight.
