      • 1. The surface of the white shelving in the back prep area is peeling, leaving the underneath surface exposed.2. Multiple shelves in the dry storage area were using soiled cardboard as shelf bottom covers. Cardboard should not be used as it is absorbent. Ensure that the cardboard is discarded and that the replacement is made of a smooth, non-absorbent, and easily cleanable material.
