    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Unsealed painted cupboards and counters were observed (Public Health Significance): Materials like raw wood will absorb juices and harbour and allow disease causing bacteria to grow. Proper materials and finishing is required to ensure adequate cleaning and sanitizing. .
      • Corrective Action: Refinish surfaces to provide a durable easy to clean surface. Add a food grade sealant, or contact paper to the cupboards. Replace the counter top so it is smooth, durable, and easy to clean. Plans in place to complete this work during the winter shut down.

    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Metal refrigeration unit has a build up of crumbs in the upper left compartment. (Public Health Significance): Contamination of food from contact with objects, people, pests or chemicals can cause serious illness. Maintaining unsanitary conditions allows for the contamination of food and can cause serious illness.
      • Corrective Action: Remove the crumbs, clean and sanitize the refrigeration unit.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Operator is using a product that is only a cleaner and not a sanitizer for their tables. (Public Health Significance): Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface. Only cleaning tables does not effectively sanitize them.
      • Corrective Action: Replace the cleaner with either a 200 ppm solution of bleach or 200 ppm solution of a QUATS, that is a proper sanitizer.

      • Observation: (CORRECTED DURING INSPECTION) Cleaning chemicals are stored with food items. Windex was stored with condiments at time of inspection. (Public Health Significance): Accidental contact, fumes and spills can contaminate foods.
      • Corrective Action: Store all chemicals safely away from food items. Operator moved the Windex to the chemical storage area at time of inspection.
    • 313 - Live animal on the premises, excluding guide animal in approved areas [s. 25(1)]
      • Observation: (CORRECTED DURING INSPECTION) Operator has a dog roaming around the kitchen.
      • Corrective Action: Operator removed the dog from the kitchen at time of inspection. Ensure the dog does not come back into the eating area and do not allow guests to bring in dogs other than certified animals. Clean and sanitize the floors to ensure all dog hair and other messes are removed from the premises.
