    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The upright coldstream cooler (next to the cookline) was unsatisfactory temperature. Temperature was measured using both an IR thermometer and probe thermometer. Internal temperature of cream dressing measured at 9C. Action required: monitor the cooler temperature. Ensure it is capable of maintaining temperature at or below 4C. Service if necessary.Temperature logs were not reviewed at the time of inspection.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips at dishwashing sink were water damaged. Action required: replace test strips.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Minor grease build-up on surfaces in the dishwashing area & shelving close to the dishwashing area. Action required: complete deep clean of dishwashing & storage areas.
