- Prepared gravy in the hot holding unit was measured at 43 degrees Celsius. The hot holding unit was not plugged into the electrical socket. Gravy was discarded at the time of inspection. The hot holding unit was plugged in and set up to 70C. Another gravy pack was preheated and measured at 61 degrees Celsius.Ensure hot unit is plugged in and temperature is set at least 60 degrees Celsius, before transferring gravy into it.
