- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Initially the dishwashing sinks were set up so that the rack for drying clean dishes was directly next to the wash sink where dirty dishes would be placed. This was reversed so that there was proper flow from dirty to clean dishes in order to prevent contamination.
