      • Observation (CORRECTED DURING INSPECTION): Burger toppings (tomatoes, pickles, onions, etc) time-stamped for 14:00; Items were still at station at 14:40. Some confusion over what "2pm" written on sticker meant (ex. time taken out of cooler vs time for disposal) due to broken sticker machine; time stamps were handwritten.

      • 1) Manager discarded toppings at time of inspection and refilled station with toppings from cooler after discussion with staff over whether the "2pm" designation was the time items were taken out of the cooler, or when the items wer due for disposal.

      • Observation (CORRECTED DURING INSPECTION): New KAY* Peroxide Multi Surface Disinfectant and Cleaner is used as a sanitizer and test strips with instructions available, however target concentration was unknown. (2350 ppm / 3500 ppm / 5000 ppm).
      • Corrective Action(s): Ensure all sanitizer and chemicals used in the premises are prepared and tested at the appropriate concentration and used for its intended purpose. This peroxide product must be at 3500 ppm peroxide as per the approved sanitation plan. Ensure staff are trained to test for this target concentration. The manager has circled the target concentration on the test strip container for staff.

      • 2. Toasted bagels must be completely covered when stored to protect from contamination
