- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: (CORRECTED DURING INSPECTION) Chlorine concentration for chemical dishwasher was measured less than 50 ppm. (Public Health significance) - Automatic chemical dish washers must provide a minimum concentration of 50 parts per million (ppm) as required to effectively sanitize dishware.
- Corrective Action: Ensure that chlorine concentration for chemical dishwasher is >50 ppm at all times. Periodic testing using test strips is essential.
- 312 - Items not required for food premises operation being stored on the premises [s. 18]
- Observation: Basement storage area was cluttered and unwanted items including carboard boxes, containers were stored along with cutlery. Public Health Significance: Too much of cluttering of unwanted items in dry storage area can attract and provide shelter to pests that carry illness carrying pathogens which may contaminate food products/items causing food-borne illness.
- Corrective Action: -Ensure that basement storage area is decluttered and cleaned.
- 402 - Critical Employee does not wash hands properly or at adequate frequency [s. 21(3)]
- Observation: Several employees entering the food premsies did not wash their hands before handling food. Public Health Significance: Handwashing plays a major role in preventing the spread of infection and, if poorly implemented can lead to food-borne illness.
- Corrective Action: -All food handlers and staff should frequently wash their hands before handling food.
