    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Operator unable to explain proper steps of dishwashing. Sanitizing step has been missed. (Public Health Significance) Sanitizing is required to destroy bacteria to prevent the contamination of food with the non-sanitized dishware (utensils).
      • Corrective Action: Ensure to follow 3 steps of manual dishwashing; wash with water + soap, rinse with warm water and sanitize with unscented bleach. Let dishware to soak for at least two minutes then air dry. Always maintain an effective concentration (100 ppm unscented bleach, 200 ppm QUAT)- follow manufacturer's specifications)
