- Have the exhaust canopy professionally cleaned. Ensure to do this on a regular basis, and keep staff cleaning the accessible surfaces inbetween professional cleaning.

- Cloths are prone to contaminatoin and bacterial growth when left out. Operator prepared a bucket sanitizer of chlorine @ 200ppm. Ensure all cloths are soaked in sanitizer at all times when not in use.
