      • The light bulbs in the kitchen and front food prep area have no light covers on them. Glass can fall into food if the bulb breaks.

      • Install light covers on the light fixtures or install clear plastic tubes over the bulbs.

      • Observation:
      • The exhaust canopy over the oven, has accumulated grease and dust on the interior surface of the stack. This is a fire hazard, and dust could fall onto food.
      • Corrective Action(s):
      • Have the exhaust canopy professionally cleaned. Ensure to do this on a regular basis, and keep staff cleaning the accessible surfaces inbetween professional cleaning.

      • Observation (CORRECTED DURING INSPECTION): Cloths are being reused to wipe food contact surfaces without being submerged in sanitizer.
      • Cloths are prone to contaminatoin and bacterial growth when left out. Operator prepared a bucket sanitizer of chlorine @ 200ppm. Ensure all cloths are soaked in sanitizer at all times when not in use.

      • - Monitor this cooler; ensure that foods are not too warm when they go into the cooler so it does not warm up the rest of the food
      • - If cooler cannot achieve and maintain 4C, have it cleaned/repaired
      • - If this cooler is still malfunctioning, and is used during a rush, ensure that potentially hazardous foods are discarded within two hours
