- Observation (CORRECTED DURING INSPECTION): Soup being hot held in a slow cooker and noted with a temperature of 26.0C. As per operator, staff reheated the soup before placing in the slow cooker for warming. However, the staff may not have reheat the soup to a high enough temperature.
- Corrective Action(s): Operator instructed his staff to reheat the food. Food was removed from the slow cooker for reheating.
- Hot holding of previously cooked food: Operator must ensure that food handlers reheat all food to at least 74.0C before placing the reheated food in a preheated food warmer for hot holding. - Observation (CORRECTED DURING INSPECTION): One of the reach-in prep coolers was noted with an ambient temperature of 10.0C - 11.0C. Internal temperatures of food were measured and the tomato sauce was noted at 8.6C and cooked chicken wings were noted at 8.7C.

- Discussed about the frequency for changing out the sanitizer solution. Please change out every 2 - 4 hours or when noted to be overly soiled as the sanitizer concentration will decrease over time and with organic debris noted in the solution.

- Corrective Action(s): Operator discarded all the cold potentially hazardous food in this unit. This cooler was emptied during the inspection. Temperature was readjusted. Operator will monitor the ambient temperature of this unit, if the unit is able to reach 4.0C within a couple hours, operator may return food into this unit for storage. If after a couple hours and the unit still cannot reach 4.0C or below, please service this cooler.
