- Observation: No sanitizer solution is being used for disinfection of food contact surfaces. Effective sanitization is necessary to destroy foodborne illness-causing micro organisms.
- Corrective Action: Ensure that a bleach (100 parts per million) or QUAT (200 parts per million) sanitizer solution is used to disinfect food contact surfaces following cleaning on a regular basis in the future. Wiping cloths stored in a sanitizer solution may be used, or a spray bottle with sanitizer solution. Allow for sanitizer to sit on food contact surfaces for at least one minute prior to removal.
