      • Staff was not sure if there is a certified food safety staff.Register and take certified food safety course.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) Handwash sink tap was loose. Fix the tap. 2) Wall underneath the spray sink was damaged. Fix the wall.

      • No sanitizer was detected in the bar sanitizer bucket. Use 200ppm quat sanitizer or 100ppm chlorine sanitizer.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Personal items and prayer mat were stored with food items. Provide a separate space to store personal items and prayer mat.
    • 09. Are chemicals stored and handled in a safe manner?
      • Quat sanitizer was measured more than 400ppm.Use 200ppm quat sanitizer.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Small plates of yogurt were placed on top of the preparation cooler. No direct cold air onto the yogurt from the preparation cooler. Staff placed the yogurt back inside the cooler during inspection.Store all cold perishable foods at 4.0 degrees C.

      • 1) Few mouse droppings were found between the standup cooler and wall. Clean and sanitize the area2) No pest reports were available for review.Provide pest reports.

      • Shisha glass container and reusable tubes were not sanitized after washing. Wash, rinse and sanitize the glass containers and reusable tubes.

      • 1) A piece of cardboard was placed underneath the panini grill.Remove the cardboard and clean the area daily. 2) No temperature records of coolers and freezers.No record charts of dishwasher and food surface sanitizer. Check and record coolers, freezers, dishwasher and food surface sanitizer daily.

      • 1) The chlorine-based mechanical dishwasher located in the kitchen was tested three times and the sanitizer rinse did not exceed 50ppm.Please have the dishwasher serviced such that it can sanitize at 100ppm. 2) The chlorine-based glass dishwasher was tested three times and 0ppm chlorine was detected. Please have the glass dishwasher serviced such that it can sanitize at 100ppm. Until the dishwashers can be serviced and verified to be sanitizing at 100ppm manual dishwashing and sanitizing must take place. Manual procedures discussed with staff on-site.

      • The tap at the shisha preparation sink was broken rendering it difficult to turn on. Please repair the tap.

      • Expired food handling permit was posted. Please print and post a copy of your valid food handling permit in a location that is visible to the public.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The small under counter white cooler located at the bar had carboard, grime, and food debris on the bottom of the cooler. Please remove the cardboard as it is not a cleanable surface and clean the cooler.
