      • The staff are not sanitizing the dishes correctly. Dishes are required to be washed with soap, rinsed, then sanitized in a bleach solution of 100 ppm and left to air dry. Ensure that proper procedures are being followed.

      • The ceiling light in the walk in cooler is missing a cover exposing the glass bulbs. Light bulbs can be damaged and shatter sending glass shards into the foods below. Ensure the bulbs are protected against shattering.
