      • The handwashing sink at the kitchen area was not draining.The manager stated there is a work order in place to fix the plumbing issue.Ensure the water in the sink is properly draining.

      • **Recurring violation noted on September 11, 2024:Dust and grime buildup was noted on the ceiling and air vents in the kitchen area.-Clean and sanitize the indicated area.**Repeat Violation**- Dust accumulation still noted in areas throughout the kitchen. - Manager has stated they have an upcoming scheduled cleaning with a new company and should see better results moving forward.Dust had accumulating in the following areas- on the ceiling by the private room and main cook line- on the ceilings above low temperature dishwashersPlease clean the indicated areas.

      • 1) Sanitizer spray bottles were not adequately labelled to identify their content.-Sanitizer spray bottles were promptly labelled to identify their content.2) Soap water was noted in a green bucket with a label indicating DT10.-The soap water was discarded and quat sanitizer was prepared and measured at 200 ppm.

      • The low-temp mechanical dishwasher at the baking area was not sanitizing the dishes and measured 0 ppm.-Fix the dishwasher to measure between 100 to 200 ppm.
