      • Operator was cooking meats in the deep fryer, BBQ and roaster in the back yard and back porch. This setting was not previously approved and must stop using it as cooking area immediately.Foods can be cooked in the approved Type E food truck provided set is done as described in this report.

      • Raw meat was observed to be Store right above the ready to eat food.Discussed the concerns with operator and asked to reorganize the fridge.

      • Hot holdings were measure at around 50 degrees C.Discussed the concerns with the operator.Make sure that all the hot holding equipment be able to maintain the temperature of 60 degrees C or above.
