- There were several food items in the standing cooler with the glass doors that were unfit and were discarded. - Parsley, dough, and corn starch mixture.
- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- 1) There was no surface sanitizer prepared at the time of the inspection. Sanitizer must prepared and available whenever there is food handling or food preparation occurring. A 100ppm solution of bleach sanitizer was prepared at the time of the inspection. 2) Cloths were observed on counters and were not being stored in sanitizer solution when not in use. Cloths must be stored in sanitizer when they are not in use. Cloths were put in sanitizer solution at the time of the inspection.

- 1) There were bowls being used as scoops for the flour and rice. Ensure all scoops have handles. 2) The bulk flour, sugar, rice, etc. containers were in bins without lids. Ensure all containers are covered when in storage. 3) The dried bread used for croutons were stored in a cardboard box. A food grade container must be used that has a lid.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- 1) The handwashing sink by the coffee bar did not have soap. 2) The front handwashing sink by the retail desk did not have paper towel. Ensure all handwashing sinks are stocked with soap and paper towel. 3) The paper towel in the men's and women's washrooms were not in dispensers. Paper towel must be stored in dispensers.

- There was a build-up of food debris inside the prep cooler, standing cooler with the glass doors, and the standing freezer. The interior of these units must be cleaned.

Violation (Outstanding): The lid on the chest freezer located in the back room closest to the walk-in cooler was broken and had tape on it. Please repair or replace the lid such that it is smooth and cleanable.

- 8/22. A deep cleaning of the facility needs to be completed. Focus on the following areas:- Floors underneath the cookline and in the back storage area.- Exterior of all equipment (i.e., toaster, prep cooler, oven, etc.)- The shelving units - Walls around the dishwashing pit, storage area, and cookline. The following areas need to be organized:- The shelving with the dry bulk ingredients- The back storage by the chest freezers and walk-in cooler. - The containers and bins on the floor near the dry goods shelving unit. Please clean listed areas:1) Inside prep cooler2) Under equipment1) There was build-up of grease and food debris underneath the cookline. 2) There was build-up of food debris underneath the shelving units in the back. 3) There was build-up of food debris on the lids of the bulk food containers.
