      • Some foods are measured to be at 7-8 degrees Celsius on the top of the food prep cooler. Ensure that foods are maintained at or below 4 degrees Celsius at all times. Operator is instructed to discard the sliced cucumbers, carrot and cheese as well as any other items not at the proper temperature during the inspection.

      • The ventilation hood above the cooking area is noted to have buildup of dust and grease. Ensure that the ventilation is cleaned.

      • Operator is noted to be smoking a vape inside the food truck during the inspection. Ensure that there is no smoking or vaping inside the food truck at any time. Discussed the issue with operator who agreed to not smoke inside the food truck any longer.

      • 1.The plastic multi drawer units holding utensils are noted to have buildup dust and dirt. 2.The counters around the facility are noted with buildup of grime and grease.3.The ventilation hood grills have heavy grease buildup.4.The bleach sanitizer bottle is covered in dirt and debris and is stored on the floor. 1-3.Ensure that the indicated areas are cleaned and sanitized.4.Sanitizer bottle must be washed and cleaned and stored off the floor to prevent contamination of the bottle.
