    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Unfinished wood was sighted on the wall used to hold wall mounted fry cutter in place. - Seal/paint the unfinished wood. All surfaces must be smooth, easy to clean and impervious to moisture.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Observed an accumulation of dried food debris on wall mounted fry cutter.- Clean and sanitize the cutter after each use. All food equipment and utensils must be maintained in a sanitary manner at all times.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • An accumulation of dust, food debris, grease observed under kitchen equipment, shelves and in between kitchen counters. - Clean and maintain all food preparation equipment and areas in a sanitary manner at all times. Scheduled cleaning is recommended due to the infrequent use of the kitchen.
