    • 302 - Critical Repeat Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Facility was using a lemon scented ammonium based disinfectant (Lysol) for disinfecting their food contact surfaces that requires a 8 minute disinfect time for effectiveness. This is not practical for a busy food establishment to leave surfaces wet for so long. (Public Health Significance): Scented products can leave a residual on surfaces that may not be food safe. Fragrances added to disinfectants may not be food safe and are to not be used.
      • Corrective Action: Prepare a 200 ppm (1 tsp (5mL) per 1 L water) bleach solution and use on food contact surfaces.

    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: Facility was using a lemon scented ammonium based disinfectant for disinfecting their food contact surfaces that requires a potable water rinse after use throughout the night. At the end of the night surfaces are disinfected with a bleach solution. (Public Health Significance): Scented products can leave a residual on surfaces that may not be food safe. Fragences added to disinfectants may not be food safe and are to not be used.
      • Corrective Action: Either purchase and use a non scented disinfectant that does not require a potable water rinse afterwards, or use a 200 ppm bleach solution throughout the night.
