      • Corrective Action(s): Repair the leak. Hot water must be available from all handsinks at all times.

      • THIS IS A REPEAT VIOLATION.
      • Corrective Action(s): Repair the lid to the grease interceptor. At the very least, there must be a temporary solution provided to minimize the risk of exposed waste material. The material must be smooth, non-porous, and easily cleaned (eg. can be mopped over).
      • Please keep EHO updated with plans to repair/replace the lid. A temporary solution must be set up within 2 weeks.

      • Corrective Action(s): 1) This is not sanitary because it can not be properly cleaned due to so many cracks and crevices where dirt and debris can get stuck. Also, it can be a tripping hazard. Replace the grease trap cover.
      • 2) Replace these lights and make sure they have light covers because it is making it hard to clean these areas and can also lead to a work place injury, cross contamination of food, and other actions that may lead to public hazards or employee injury

      • Observation (CORRECTED DURING INSPECTION): *Repeat Violation* The chemical dishwasher had no detectable sanitizer.
      • Corrective Action(s): The operator was able to prime the sanitizer dispenser, and after a few cycles the dishwasher was dispensing 50 ppm chlorine on the plate surface. Buy test strips and test multiple times per day to ensure sanitizer is being dispensed as this is now a repeat violation. Make sure these are logged in your dishwasher concentraion log, keep it up to date, and have it readiliy available for review. Further enforcement action may be taken with a correction order demanding replacement for a new dishwasher if these issues persist.

      • Observation: Droppings were spotted around entire kitchen perimeter walls and especially under all cooking equipment, shelves, and cooler. Multiple entrance points found in the kitchen and by the back door. There was too much clutter in the back storage area, but droppings were spotted as well. Operator was not able to provide pest management company service records.
      • Corrective Action(s): All areas in the kitchen with droppings were cleaned and sanitized at the time of inspection. The clutter in the back storage area needs to be removed, and then all areas with droppings must be cleaned and sanitized. Hire a pest control company to come in bi-weekly and send your Health Inspector the reports. All entrance points must be blocked, and traps must be set; snap traps, sticlky traps, corner boxes, and outdoor boxes by the back door. A proper cleaning schedule must be in place and followed strictly to avoid closure of premise due to a high risk of imminent public health hazard.

      • 2) Hard to reach areas around fryers and the grill have built up grease, and the mop sink area has dirt and debris.
      • 3) There is food debris under the stand up cooler, under the cooking equipement, under all the shelves, and basically around entire perimeter.
      • 4) The ice machine has build up of grime on the walls.
      • 5) The back storage area is cluttered to the point where you can not walk in. Cleaning is not even an option because of the clutter in the way.
      • Corrective Action(s): 1-3) Clean the mentioned areas, and make sure to keep cleaning more frequently to avoid build up. Print a cleaning schedule and have it posted in a visible area so that staff members can remember to follow the schedule
      • 4) Empty the ice, clean the grime, and then disinfect with 100-200 ppm bleach sanitizer
      • 5) Remove all the clutter then do a deep clean of the area.

      • 2) The chemical dishwasher had no detectable sanitizer. The container had run out.
      • Corrective Action(s): 1) Staff made fresh sanitizer spray solution, measuring at 200 ppm QUATS, at the time of inspection. Ensure sanitizer is made fresh everyday and checked frequently to maintain 200 ppm concentration.
      • 2) Operator brought a new sanitizer bottle at the time of inspection. Re-wash all dishes and utensils immediately.

      • Observation (CORRECTED DURING INSPECTION): coffee creamer (1L carton) found in the bar cooler to have an internal temperature of 7 degrees C. cooler's ambient temperature measured 6C
      • Corrective Action(s): product moved to glass door cooler. Adjust the temperature of the cooler unit and continue to monitor.

      • Observation: food debris build up and equipment/utensils found in hard to reach areas in the back of house (behind cooler units, underneath dishwashing area, on lower shelf of stainless steel table, etc)

      • Observation (CORRECTED DURING INSPECTION): 1)Large spatulas for grill stored in dirty stagnant water. Use ice water and change frequently or store in a clean dry container and change frequently.
      • 2) Utensils, bowls, etc stored in bus pan with lots of debris in bottom. Store all utensils in clean areas.
      • 3) Wire drain racks used for clean dish storage are coated with grease and dirt. Clean and sanitize; then clean and sanitize all dishes on these shelves.

Kitchen hand sink has no paper towel in dispenser; paper towel roll is on top of fridge, hard to use, flies have settled on roll. Keep your dispenser stocked.

      • Observation (CORRECTED DURING INSPECTION): Employee observed putting on gloves for handling raw meat, and changing gloves without handwashing again to prepare/serve food. Always wash hands before handling food; We do not require the use of gloves but if you need to change gloves you must wash hands every time you change gloves. Employee immediately washed hands after this conversation.

      • Observation: Open bulk ingredients (sugar, etc) are in uncovered blue bin under hot water units and right beside mop sink. this is a very dirty area and is not appropriate for food storage. Do not store any food beside the mop sink.

      • Observation: Fruit flies noted in kitchen. Clean thoroughly and keep kitchen organized, clean and dry to prevent flies from breeding. Recommend pest control to treat drains. Also note #305.

      • 2) Dirty rags and wet mop in kitchen will attract flies. Remove dirty cloths frequently and properly wring and dry mop after every use.

      • Observation: 1)Lots of corners and dry storage shelves are very dirty. Grease and food debris noted under grill/deep fryer.
      • 2) Vent hood is past due for servicing - sticker indicates it was due in November 2017. Have hood serviced.
      • 3) Floors in kitchen and grill area are greasy. Clean.

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: 1) Kitchen garbage can is badly broken. Replace.
      • 2) Dishwasher drain board is in very poor repair; parts of the metal have come away from the underlying wood creating gaps where water leaks can occur, and exposing the unfinished wood. Wood is black with dirt and what appears to be mold. Outside and underside of drain board is also unfinished wood. These must be smooth, washable and durable surfaces. Re finish, repair or replace dishwasher drain board within 6 months.
      • 3) Green cutting boards are badly worn, hard to clean. Both appear dirty. Replace or refinish.
      • 4)Grill hand sink is leaking. Repair.
