      • There are multiple dozens of uninspected eggs in the walk-in cooler- Remove uninspected eggs from the facility. Ensure all restaurant foods are prepared with inspected eggs only- Inspected eggs are available for restaurant use
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • 1. Wet wiping cloths were left on the counter and cutting board. No sanitizer bucket setup- Ensure wiping cloths are stored in a sanitizer bucket between uses2. The concentration of the chlorine sanitizer in the spray bottle was too high exceeding 400 ppm and bleached the test strip- Sanitizer solution diluted to 100ppm. Ensure sanitizer concentration is verified to be at a food safe concentration of 100 ppm.

      • The mechanical dishwasher is not in good working order and is out of soap and not dispensing sanitizer. A 2-compartment sink available only.- Repair dishwasher to be in good working order- Single-use disposable customer dishes to be used only

      • The customer washroom hand sink paper towel is not in a dispenser- Ensure the paper towel is offered in a suitable dispenser
