    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Hot and cold food holding temperatures were satisfactory, EXCEPT for the waitress cooler was at 11 C.The milk and creamers were moved to the bar cooler and this fridge will be defrosted, cleaned and restarted.Do not put high risk foods back in this cooler until it is able to maintain 4 C or colder.

      • Overall the kitchen is quite clean and well organized, EXCEPT for the floor area under the cooking equipment and prep table coolers.These identified areas need to be cleaned all the way back to the wall.Sept 9, 2025 - this is still a work in progress. This needs to be a part of the weekly cleaning schedule, or more frequent.
