      • Observation (CORRECTED DURING INSPECTION): Back room hand sink observed being used to drain pineapple slices.
      • Corrective Action(s): Use the adjacent vegetable prep deep sink for draining as discussed. Hand sink is solely meant for hand washing

      • Observation: Food debris observed affixed to many clear plastic inserts on the air drying rack. These were removed to be rewashed and sanitized
      • Corrective Action(s): Ensure staff have been trained on how to properly ware wash as discussed

      • Observation: Although metal insets have had burned on material substantailly removed, additional scrubbing is required.as discussed
      • Corrective Action(s): Recommend to confer with other Mucho Burrito locations on what cleaning materials they use to scrub their metal inserts with

      • Observation: Food debris observed affixed to the inside of many inserts observed on the air drying rack.
      • Burned on debris observed affixed to the exterior of many metal tray inserts as well as their lids.
      • Inserts observed stacked on on top of each other without properly air dying first.
      • Water temperature of the Quat sanitizer too warm at 95F. This will affect the accuracy of measuring the concenttation of Quat using your test strips.
      • Corrective Action(s): Rewash and sanitize all metal inserts removed from the air drying rack
      • Scrub exterior of all metal containers, lids, trays that have burned on debris affixed to remove all product affixed
      • Lower temperature of the water to 75F
      • Violation Score: 25
    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Metal bristle brush observed oin site to scrub the grill surface
      • Corrective Action(s): Remove from premises. Metal tines can potentially break off.

      • Observation: Air observed in the tubing for the Quat dispenser. This will affect the concentration of Quat when warewashing
      • Corrective Action(s): Contact technicain to have unit serviced.

      • Observation: Quat dispenser tubing initially observed with air in the line. This was purged after several pumps. There should not be any air in the tubing as this can lead to incorrect quat being dispensed
      • Corrective Action(s): Contact technician to have pump mechansim repaired
