      • Corrective Action(s): Please ensure that the cold table is repaired or replaced to ensure that the food items are maintained at 4C or less. Please inform health officer once completed.

      • 2. Walk in cooler green metal shelving racks are rusting and becoming hard to clean. All food contact surfaces must be durable and easy to clean. Replacement of racks are needed. This is an outstanding infraction from last year.

      • Observation (CORRECTED DURING INSPECTION): Bags of purple onions observed to contain mould on surface and interior of the onion. Staff were currently cutting and processing the onions to salvage what can be still used. Onions with mould on and in it must be discarded and not served. Photos taken of contaminated onions.
      • Corrective Action(s): Discard all onions which are mould impacted. Do not serve mould impacted or contaminated ingredients.

      • Observation (CORRECTED DURING INSPECTION): The front of the house sanitizer bucket detected less than 200 ppm quat as the solution is too old and require replacing more frequently. Operator informs me the bucket is changed out every 2 hours. A quat sanitizer bottle at 200 ppm was available at the time of inspection and in use.
      • Corrective Action(s): Ensure to change out solution more frequently when it is busy or when the solution becomes dirty. A 200 to 400 ppm quat concentration is required for adequate sanitizer.

      • -Provide lids for compost containers.
