- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Sanitizer solution was not food grade (required a potable water rinse) and cannot be used for manual dishwashing and for sanitizing food contact surfaces. Owner had a container of bleach in the unit and was asked to prepare a 100 ppm chlorine solution and use that for manual dishwashing.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- Owner did not have test strips for sanitizer/manual dishwashing. PHI gave operator some test strips.
- 14. Does the special event vendor have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
- No hot water, water was slightly above room temperature. Owner adjusted the hot water tank temperature.
