      • Observation (CORRECTED DURING INSPECTION): 1. Staff was observed to skip the sanitizing step of the 2 compartment sink warewashing procedure.
      • 2. Wiping cloths were stored on counter.
      • Corrective Action(s): 1. 2 compartment warewashing procedure was reviewed with staff on-site. Ensure that dishes are washed/rinsed in the first sink, sanitized with 100 ppm chlorine solution, and left to air dry. Information sheet was available on the wall in dishwashing area. Re-wash and sanitize all dishes that were washed today.
      • 2. Staff was instructed to keep wiping cloths stored in sanitizer solution buckets when not in use.
