- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- 1) Frozen whole chicken was observed thawing in a bucket at room temperature. Operator moved the chicken to the walk-in fridge. Please ensure frozen meat and poultry are thawed under cold running water or in the fridge at 4 degrees Celsius or less.

- 1) Hand sink had a cardboard box on top of it when PHI arrived. There was also no soap at the hand sink.Please ensure the hand sink has soap at all times and is not obstructed. It must be stocked and available for use whenever food is being prepared.
