- Due to power tripping to the hot holding unit, internal temperature of the beef samosas dropped to 50 degrees Celsius.Samosas were fully reheated and once power stopped tripping, temperature was able to be maintained above 60 degrees Celsius.
- 22. Is the temporary food establishment properly constructed, configured and maintained?
- Power to one of the hot holding units kept tripping. This resulted in food temperatures for the affected hot holding unit to drop as low as 50 degrees Celsius. Once some vendors left the event and their equipment was no longer pulling power, the hot holding unit stopped tripping.
