      • The operator had pork spring rolls to use for sampling the chili garlic sauce. However, it was not temperature controlled.- Directed operator to not use pork spring rolls for sampling, but rather chips or crackers instead.In the future, please ensure:- High risk foods are temperature controlled (kept at 4 C or below, or 60 C or above after cooking/reheating).
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The operator had pork spring rolls to use for sampling the chili garlic sauce. However, the operator did not have any means of dishwashing.- Directed operator to not use pork spring rolls for sampling, but rather chips or crackers instead.In the future, please ensure:- You have the proper applicable dishwashing requirements if preparing/handling/selling/sampling high risk foods (such as pork spring rolls).
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
