      • Front retail rotary display fridge for desserts ranging 14-16 deg C for custard desserts and have also been there since this morning (>2hrs)
      • Corrective Action(s): Discarded foods. Have both units adjusted/serviced for temperature.

      • Clean and sanitize all shelves/floors where droppings are observed

      • Observation (CORRECTED DURING INSPECTION): Some bags of nuts in retail section back area have been contaminated -bags opened and droppings
      • Corrective Action(s): Discard bags -any foods with mouse dropping contamination must be discarded
      • Operator to go through all foods in the retail section areas especially lightly packaged foods (soft plastic, paper, nylon) stored on lower shelves that can easily be opened by rodents
      • Remove all lightly packaged foods and store on your upper shelves for the back retail areas until the infestation has been eradicated (no pest activity)

      • Observation: As evident from the mouse droppings in the facility there is a mouse infestation present.
      • Assured Pest Control comes in monthly -last two work reports (June, May) checked and rodent activity is present
      • Corrective Action(s): Once all the areas noted with droppings are cleaned you are to have your pest control come in again for an update on the situation

      • Observation: A back cargo container wide door observed completely open with only a non-secure fly netting. Rodents can easily enter this area leading into the kitchen
      • Corrective Action(s): Keep the garage door completely closed except when shipping goods.
      • You will need to place a tight fitting door (no gaps) for the cargo container if you want extra ventilation

      • Observation: Mouse droppings observed behind the proofer in the kitchen area, the back retail area below the shelves and alongside the walls

      • Corrective Action(s): Keep foods off the ground and ideally all goods >15cm off the ground. Adjust the lowest shelves >15cm off the ground or place a plastic liner under so nothing goes through

      • Corrective Action(s): Maintain sanitizer solutions >100ppm as per test strips -change the sprays at least weekly
      • Hamper the wiping towels after use do not leave used ones on the counters -use a fresh one each time

      • Observation: -Many foods stored on the ground in the kitchen hallway leading to the retail area.
      • -A number of multi-level shelves have the lowest shelf too close to the ground -workers cannot clean and disinfect
      • -Personal foods are being stored in multiple fridges
      • -Bare paper towel roll in use in main kitchen
      • Corrective Action(s): -Keep foods off the ground >15cm.
      • -Adjust shelving so lowest shelves are >15cm off the floor otherwise for the retail area place a hard plastic liner on the bottom shelf so nothing falls through
      • -Concentrate all worker personal foods in one fridge location down and away from public foods
      • -Use a spindle or wall dispenser for bare paper towel rolls as ends will be contaminated when handled
