- Corrective Action(s): Operator repaired the low temperature dishwasher during the inspection. The chlorine residual measured 50 ppm when re-measured during the inspection. Re-run all the dishes washed today through the dishwasher again.

- Observation (CORRECTED DURING INSPECTION): A large tub of rice was observed cooling on the counter at room temperature. Rice probed at 38C after 4 hours of cooling. Operator discarded the rice during the inspection.
- Corrective Action(s): - Ensure potentially hazardous foods are properly cooled from 60C to 20C or less within 2 hours, and 20C to 4C or less within 4 hours to prevent microbial growth and/or production of toxins that may cause illness.
- - Ensure large containers of food are transferred into shallow containers to speed up the cooling process.
