    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Potato puncher was heavily soiled with food debris. Unclean equipment can harbour bacteria and contaminate food during preparation.- Clean and sanitize the potato puncher. Ensure staff follow & maintain proper cleaning & sanitation schedule.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Potato bag stored on the floor in storage room. Storing food on the floor exposes it to contamination from dirt, pests, spills, and cleaning activities, making it unsafe for consumption.- Use shelving & store the potato bag at least 15 cm (6 inches) off the floor.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Cooler holding mayonnaise in the prep area measured at 18°C. 2) Refrigerator containing red sauce in the kitchen area measured at 10°C.Mayonnaise & red sauce are high-risk food items that must be kept at ≤4°C. Holding at elevated temperatures rapid bacterial growth, increasing the risk of foodborne illness.- Do not use both units until repaired and capable of maintaining safe temperatures. Monitor & record temperatures regularly.
