      • Observation (CORRECTED DURING INSPECTION): Rice in the rice cooker is currently at ~40 degrees Celsius with the "Keep Warm" setting on.
      • Corrective Action(s): *Employee instructed to discard the rice
      • *Hot foods must be held at a minimum temperature of 60 degrees Celsius to prevent growth of pathogenic bacteria.
      • *The "Keep Warm" setting on the rice cooker is not suitable for using as a method of reheating the rice.
      • *Discontinue this practice immediately.
