    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The spring roll sauce in plastic containers which contain oil and garlic is not refrigerated. Garlic is a high risk food item, that can support pathogens such as botulism. Prepare containers for clients shall be refrigerated. The pre-portioned containers shall be disposed of.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Plastic spoons at the ice cream station are not arranged so the handles are facing the same directions. Actions shall be taken to ensure the handles are in the same direction to prevent contamination of the food end of the utensil.

    • 09. Are chemicals stored and handled in a safe manner?
      • No labels were noted on an assortment of spray bottles. The spray bottles shall be labelled so staff can identify the product and its usage.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Cooked meat was noted to be at 33C on the counter. High risk foods shall be kept above 60C or cooled rapidly. The food was placed in a cooler during the inspection. High risk foods between 4C and 60C can allow pathogens to grow rapidly, so proper temperature control is required.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • A leaf blower for clearing snow was stored on the floor in the kitchen. The kitchen shall not be used for general storage of maintenance equipment. The leaf blower was removed during inspection.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Fresh coffee in used filters were stored in an oven as odor control. Mould was present on some of the coffee grounds. The moldy products shall be discarded. Please ensure dry filters/grounds are used as odor control.
