- Observation (CORRECTED DURING INSPECTION): Plastic container of pooled eggs was at 25 deg C. Operator indicated it was cooling and had been left out for 1 hour.
- Corrective Action(s): Move item to cooler immediately. If this is observed again wtihout any time tracking, item will be discarded.

- 2) Sanitize all surfaces with mixture of bleach/water (1000ppm)
- 3) Get pest control visit immediately. Operator indicated they get monthly visits. Last report dated March 7th indicated there was activity and that sanitation needed to be addressed.

- Observation (CORRECTED DURING INSPECTION): Sanitizer bucket containing bleach solution has 0ppm chlorine. An adequate concentration of sanitizer is important to reduce bacterial levels on food contact surfaces.
