      • Observation (CORRECTED DURING INSPECTION): Two large pots of beef soup had internal temperatures measured at 51'C and 44'C. Operator claimed both were prepared on May 27, prior to the facility's closure and left on the stove since. Both were discarded by the operator at this time.
      • Corrective Action(s): As per the operator, beef soups are prepared every morning and kept warm to be used throughout the day. Ensure that all hot-potentially hazardous food are stored at or above 60'C at all times. Any soups stored below 60'C for 2 hours must be discarded.
