- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Thermometers are not equipped in the following areas: 1. Freezer compartment of white fridge in the upstairs kitchen 2. White Kenmore Fridge (downstairs) 3. White Frigidaire Freezer (downstairs) Obtain a thermometer designed for use in the above noted units to verify adequate temperatures are being maintained.**Note: Adequate temperature of the freezers and fridge were verified by PHI during the inspection. The units were measured at a temperature of -18 degrees C (freezers) and 4 degrees C (fridge).

- Pest control records are not being adequately maintained. New AHS pest control record template was provided to the operator during the inspection. Even when pests are not evident, a pest monitoring program must be in place. Please ensure to complete pest control records monthly and keep them on site for verification by a Public Health Inspector. **Note: There were no signs pest activity observed during the inspection

- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- No test strips are available on site for the chosen sanitizer, Chlorine. Ensure that appropriate test strips are available to confirm that the sanitizer solution for dishwashing is maintained at 100 ppm.
- 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
- The food handling permit on display was noted to be expired. Operator replaced it with a copy of the current food handling permit during inspection.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- The exhaust fan above the cook top in the basement is not operational. Ensure that all food preparation area is equipped with a working ventilation unit.
