OBSERVED WASTE WATER BACKUP AT THE FLOOR DRAIN NEXT TO THE DISHMACHINE IN THE PREP AREA. A PLUMBER WAS ONSITE TO ROD OUT THE DRAIN BEFORE THE INSPECTION HAD OCCURED AND WAS THERE AT THE TIME OF THE INSPECTION. MANAGEMENT INSTRUCTED TO ROD OUT AND REPAIR THE DRAIN SO THAT WASTE WATER BACKUP DOES NOT OCCUR ON THE PREP AREA FLOOR. NO FOOD WAS BEING PREPARED AT THE TIME OF THE INSPECTION. RESTAURANT CLOSED VOLUNTARILY DURING THE INSPECTION TO REPAIR THE PROBLEM. DR. LOHFF AND SUPERVISOR SALAZAR WERE NOTIFIED. NO CITATION WAS ISSUED DUE TO THE PROBLEM BEING REPAIRED BEFORE THE INSPECTION HAD OCCURED. CRITICAL VIOLATION 7-38-030.

OBSERVED MOLD GROWTH ON INTERIOR CONTACT SURFACES INSIDE OF THE ICE MACHINE. MUST REMOVE ICE AND HAVE INTERIOR OF ICE MACHINE CLEANED AND SANITIZED. THE ICE MACHINE WAS CLEANED AND SANITIZED DURING THE INSPECTION. SERIOUS VIOLATION 7-38-005A.
