    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Croissants containing ham and cheddar were being held at room temperature longer than 2 hours and no discard log or time keeping tracking sheet was being documented. PHI educated staff regarding time requirements at the time of inspection and requested products be refrigerated.Please discontinue holding high-risk foods at room temperature greater than 2 hours and use time labels to monitor the duration that high-risk foods are held at room temperature. Alternatively, the facility can apply for time as a public health control for specific menu items to extend the holding time.

    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Observed multiple scoops stored in bulk food containers. Corrected during inspection. PHI directed Operator to put scoops put away for washing. Do Not store scoops in bulk food containers to prevent cross contamination. Do not use scoops without handles and do not re-use, single-use disposable utensils.

      • An invoice will be e-mailed to you. Follow the instructions on how to pay. Once payment has been received, you will be e-mailed your Food Handling Permit. Print this off and post it in an area visible to customers.
