- Observation: Build up of grease and food crumbs noticed on the equipment, in gaps between pizza prep cooler and side table, underneath the grill, on the gas lines to the deep fryer, under the dishwasher and oven.
- Corrective Action(s): 1. Thoroughly clean all of the above areas and surfaces to remove food/grease build up. Cover surfaces to prevent food build-up as discussed. Cover joints between tables with aluminum tape. Even slight amount of food on the floor, equipment surfaces and legs, underneath and behind equipment could attract rodents.
- 2. Repair or refinish the walls behind the dishwasher, oven and hand sink so that they are easy to clean and there are no gaps or crevices where food build up could occur. Recommneded using FRP panels to finish walls in these areas. Floor wall junctions must be smooth, gap free, and easily cleanable.
- 3. Please forward copies of the pest control service reports.
- 4. Replace the broken mesh for the back screen door.
- 5. Ensure that back door is always kept closed to prevent entry of rodents.
