- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- A bin of raw burger patties, and a bin of cooked patties, were sitting without temperature control. Both were approximately room temperature. The food was not actively being handled; there was no attendant in the building. Several other meats were reportedly smoked but not observed at the time.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- Raw burger patties were separated by plastic wrap which required direct handling to remove. There was no handwashing provision in the shed. Adequate tools were not in the shed to prevent direct contact.
- 24. Is solid and liquid waste being managed in a suitable manner?
- The smoking shed was a food handling area and must be maintained properly. The garbage was full of raw burger wrappers which would have taken days/weeks to accumulate.
