      • 1. The chemical dishwasher was not producing any concentration of sanitizer solution. The system did not appear to be pumping any sanitizer even though the bucket was full.Repair the dishwasher so that it correctly adds sanitizing solution into the wash cycle.Note: As the kitchen is only used to prepare and serve foods that do not involve customer reusable dishes or cutlery, a 2-compartment sink would be suitable if the administration wishes to remove the mechanical dishwasher.

      • 1. The bleach surface sanitizer was much too strong. The bottle said to use 1:9 concentration, which is much too strong. The correct concentration is 100ppm which is achieved by 1 teaspoon of bleach in 1 litre of water. The concentration should be confirmed via the bleach test strips.
