    • 211 - Frozen potentially hazardous food stored/displayed above -18 °C. [s. 14(3)]
      • Observation: A chest freezer temperature measured -10°C, which is greater than -18°C, the minimum required
      • Corrective Action: Adjust the temperature of the freezer to -18°C or less.
    • 212 - Operator has not provided acceptable written food handling procedures [s. 23]
      • Observation: There is no written Food Safety Plan in the facility.
      • Corrective Action: Prepare a written Food Safety Plan and maintain the Plan in the facility.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: The dish/ utensil sanitizing bleach solution contained less than 200 ppm Chlorine which is the minimum amount required.
      • Corrective Action: Ensure the sanitizing solution contains at least 200 ppm Chlorine. The use of Chlorine test strips is recommended.
