- Sandwich display cooler temperature was too high. Food must be kept below 4.0 C. Cooler must be emptied and not used until it can keep the food at an acceptable temperature.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- No sanitizer test strips were available to ensure the chlorine sanitizer was at 100 ppm. Chlorine test strips must be obtained and used to ensure the sanitizer concentration is correct.
