    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The prep cooler was measured at 11°C.The hot holding rice and potatoes were measured ~40°C and times were not being recorded. Please ensure that all high-risk foods are stored either below 4°C or above 60°C to prevent harmful bacterial growth from occurring.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Handwashing station had a large drink cooler in front of it and dishes inside of it, making it inaccessible for handwashing.Inspector had employees move the dishes inside of the sink and move the drink cooler so that the handwashing station was readily accessible.

      • The quats sanitizer in the sanitizer bucket was less than 50ppm. This was corrected at the time of inspection.

      • The concentration of quat sanitizer in the spray bottle in the back area has a concentration greater than 400ppm.Solution was changed out at time of inspection, and measured 200ppm quat.
