    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Thermometer is not made available in the cooler and freezer. Obtain thermometers for the coolers and freezers used to hold perishable foods. Coolers must operate at 4 C or less. Freezers at - 18 C or less. Ensure a probe thermometer is also available in the kitchen to monitor cooking and hot holding temperatures of food.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Bleach test strips are not available for checking sanitizer concentration. Obtain bleach test strips that test the range from 0 - 200 ppm.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Food handling permit is not posted in the kitchen or in public view. Post the food handling permit.
