- Used wiping cloths are being left on counters/cutting boards and no readily available sanitizer solution was present in the food handling areas.- 200 ppm quats sanitizer solutions were prepared and staff are to immerse the cloths in the solutions after each use.

- One food handler was not wearing an apron/chef coat over their street clothes. Aprons are available for staff.

- Cardboard shelf liner noted on the "clean" dish storage shelving unit.- Remove the cardboard as it is not a moisture resistant, easily cleanable surface.

- Cooking utensils (Ladles/Togs, Etc.) are being stored in a container of water in between uses at the cook line.- Store the utensils in an empty container, in water held above 60C or in an ice water bath in between uses and send for frequent cleaning.
