- 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
- Observation: (CORRECTED DURING INSPECTION) Potentially hazardous cold foods are stored at above 4°C. The temperature of mozzarella cheese in the right side compartment of the maketable cooler was recorded at 12.2°C and internal temperature was recorded at 12°C. (Public Health significance) - All potentially hazardous foods must be stored at/below 4°C or above 60°C - out of the danger zone to prevent bacterial growth and possibly food borne illness.
- Corrective Action: The operator immediately discarded the cheese during inspection. Ensure that the refrigeration units are able to maintain a temperature of 4°C or less, monitor and adjust the temperatures or have serviced, as required.
- 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
- Observation: A gap was observed in the back door and a proper seal was absent. Improper closure of the back door can lead to entrance of pests into the food premises and potentially lead to foodborne illnesses.
- Corrective Action: The operator to get a weather strip for the back door to ensure propure closure of the door and thus eliminate any conditions that could allow entry of pests into the food facility.
